Ghana Style Lamb Liver
This is my own recipe. I hope you enjoy it.
Ingredients:
300 g (3/4 lb) sliced fresh lamb liver
1 red onion, finely chopped
1 Tbsp. fresh rated ginger
1 Tbsp. peanut (groundnut) oil
2 tsp. palmnut oil
1/4 c. grpund tomatoes
salt and hot pepper to taste
Directions:
Heat oils on medium-low heat.
Fry onion and ginger until onion is limp and translucent.
Lower heat.
Lay liver slices on top of onion.
Add tomatoes and hot pepper to pan.
Stir gently.
After a few minutes, gently turn liver slices over.
Stir the whole pan gently, turning slices over and mixing gravy.
It's done when it's done :-)
