Meatless Potato and Cheese Cassarole

For all of you "meatless" lovers!

Ingredients:

4 large potatoes 1 large onion 4 slices of cheese (tofu cheese or Velveeta) 2 tbl of lemon pepper 1/2 diced green pepper 1/2 diced red pepper 1 tbl spoons of olive oil

Directions:

Peel and dice potatoes. After rinsing, place diced potatoes in a boiling pot of water (boil until potatoes are somewhat firm but not mushy). While potatoes are boiling, in a skillet you want to saute' the diced onion and bell peppers in the olive oil. As the mixture is sauteing, sprinkle with the lemon pepper. Keep mixing and sauteing until the veggies become limp. Now, drain the potatoes of all water. As the veggies saute' in the skillet, start scooping the potatoes into the sauteing veggies. Mix everything together. STOP! Let the combined potatoes and veggies cook a few minutes (let bottom brown). Turn off fire and take your cheese slices and lay them atop of the dish, cover for about 2 minutes or until the cheese has melted down. Dig in! Serves 4-5
